Yields 10 servings
For the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Drink (produces 850ml, enough for 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Method
Making the Citrus Syrup: Place all the components inside a pot, heat until it reaches a light boil, agitating until the sugar dissolves. Then, turn off the stove and leave to cool down entirely. Decant into a sealable bottle, seal and store chilled, it will last for up to four weeks.
To make Cocktail Base: Pour the specified spirits and syrup into a sizeable container, let it rest for an hour, then filter it preferably using cheesecloth, making it fully clarified.
When ready to serve: Measure 85ml from the batch mix into a cocktail shaker containing ice, and stir lightly for one minute to chill. Pour into a chilled martini glass or a similar vessel, decorate with a few cranberries and complete it by giving it a light spray of mandarin oil over the drink.
